Triple Choc Muffin Recipe

these muffins have been a companion of mine for over half of my life. originally a recipe from a woman’s weekly that my mum adapted, she made them for me for school decently frequently. theyre more than mum-approved too: my friend who normally doesnt like muffins said these were some of the best she’s made. they’re cool, and now i share them with you:

Makes 24 muffins.

You’ll need:

  • 2 cups self raising flour
  • 1/2 cup cocoa powder
  • 1 cup caster sugar
  • 1 cup choc chips (milk, white or dark)
  • 2 eggs
  • 125g butter
  • 3/4 cups sour cream
  • 1 1/4 cup buttermilk
    • alternatively use 1 cup yoghurt and 1/4 cup milk

Do this:

  1. Preheat oven to 180c and add muffin cases to a muffin pan.
  2. Stir dry ingredients into a large bowl.
  3. Melt butter. Add eggs to the butter one at a time and mix them.
  4. Add the rest of the wet ingredients to the butter.
  5. Combine all ingredients and mix
  6. Spoon mixture into muffin cases.
  7. Bake for 25 minutes.
