Triple Choc Muffin Recipe

these muffins have been a companion of mine for over half of my life. originally a recipe from a woman’s weekly that my mum adapted, she made them for me for school decently frequently. theyre more than mum-approved too: my friend who normally doesnt like muffins said these were some of the best she’s made. they’re cool, and now i share them with you:
Makes 24 muffins.
You’ll need:
- 2 cups self raising flour
- 1/2 cup cocoa powder
- 1 cup caster sugar
- 1 cup choc chips (milk, white or dark)
- 2 eggs
- 125g butter
- 3/4 cups sour cream
- 1 1/4 cup buttermilk
- alternatively use 1 cup yoghurt and 1/4 cup milk
Do this:
- Preheat oven to 180c and add muffin cases to a muffin pan.
- Stir dry ingredients into a large bowl.
- Melt butter. Add eggs to the butter one at a time and mix them.
- Add the rest of the wet ingredients to the butter.
- Combine all ingredients and mix
- Spoon mixture into muffin cases.
- Bake for 25 minutes.
